Cookin in the Kitchen: Tomatillo Guacamole

Tis the season for backyard barbeques and if you’re ever at a loss for what to bring to the party, look no further. This recipe for tomatillo guacamole is an all-around crowd pleaser. A brighter, more flavorful take on typical quacamole, this recipe is great just as a dip, or on tacos, atop fish . . . you name it!

TOMATILLO GUACAMOLE

Yield: 4 to 6 servings

 

INGREDIENTS

  • 6 to 8 tomatillos, husked and coarsely chopped (about 8 ounces)
  • 3/4 cup coarsely chopped fresh cilantro leaves
  • 1 avocado, halved, pitted, peeled and diced
  • 1/2 onion, coarsely chopped
  • 1/2 jalapeno, coarsely chopped with seeds
  • 2 cloves garlic, smashed and quartered
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon salt

 

DIRECTIONS

Combine the tomatillos, cilantro, avocado, onion, jalapeno, garlic, lime juice, cumin, and salt in a food processor or blender and pulse until combined.
